Help! I’m at home with three kids. The third kid is relatively new and this is the first time (summer vacation) I’ve really comprehended what it means to have three kids, who need me at any and all given times a day. With every new child you have that “getting to know you” period; this one has been marked by me getting to know my new 5 person family, and getting to know myself as a mother of three.
In the past few weeks, every conversation I have with other mothers always starts out with “So, how are you surviving the vacation”. There is no doubt that we mothers are in survival mode; being the sole entertainer of the kids on their vacation is no easy feat.
I find that my biggest challenge is trying to shut off the “screens”. I shut off the television and they want the Ipad. I restrict use of the Ipad and they take my Iphone. I take the Iphone away and they say “We’re bored”. So I kindly request that they play “make-believe” games-a request that as a child used to annoy me a great deal. They run to their costume chest, take out the ninja costume and superman and start a super-hero wrestling match. After ten minutes, while panting, I sit them down to watch TV for some down time.
One of the activities that I find does seem to gain their interest (and mine) is to make cookies and cakes with them; otherwise known as me making them and them licking the spoon. This past week, my dear friend Ayelet, told me that she’s been on a search for the perfect chocolate covered cornflake cookies. I was a bit skeptical because I thought that those cookies were super easy to make, but Ayelet pointed out that she found the recipe for the perfect texture (super crispy) sweetness (not too bitter, not too sweet) and color (shiny). So I got the recipe, and kept the kids away from the Ipad, occupied and happy for at least 30 minutes of this vacation. Enjoy!
Chocolate Covered Cornflake Cookies
Ingredients for about 30 cookies:
7 cups cornflakes
3 tablespoons honey
3 tablespoons good quality cocoa powder
100 grams/3.5 ounces halva
50 grams/1.5 ounces dark chocolate
1 tablespoon liqueur (such as Grand Marnier, Cointreau)
- Place all of the ingredients excluding the cornflakes in a medium saucepan, and cook on medium heat until all ingredients are melted and combined.
- Place the cornflakes in a large bowl and pour the chocolate mixture over the cornflakes. Mix until all the cornflakes are coated.
- Prepare a tray lined with cupcake liners. Fill each cupcake liner with two tablespoons of the cornflake mixture. Cover with plastic wrap and refrigerate for at least two hours.
- Eat right out the fridge, otherwise they might begin to break apart.
